Why do some bartenders clap their herbs before using them? We saw that in a cocktail lounge recently but we did not dare to ask the bartender

I guess you almost could smell the answer. That is to break the spores and release more aroma and flavour. Very suitable for all kind of Herb Martinis f.i. Level Basil Martini.
